4th Of July Berry Scones

This was a very fun and easy scone recipe for the 4th of July. With blueberries, strawberries and a white glaze these little treats are very patriotic. You can whip these up in under 30 min. and they are great for any backyard party or barbecue. Let’s get baking!

(ps. I doubled this original recipe from RosannaPansino.com so feel free to cut in half. Makes about 40 scones.)

INGREDIENTS:

  • 8 large strawberries (sliced)
  • 1 cup blueberries
  • 4 large egg yolks
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla 
  • 1 cup granulated sugar
  • 6 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 2 cups butter (Chilled and cubed)

GLAZE INGREDIENTS:

  • 4 cups powdered sugar
  • 4-6 tablespoons hot water

DIRECTIONS:

  1. Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the egg yolk, heavy whipping cream and vanilla. Set aside.
  3. Now, in the bowl of a stand mixer, mix flour, baking powder, sugar, salt, and cubed butter. Mix on low speed until a coarse meal forms (little balls smaller than a pea).
  4. Slowly add in the wet mixer from earlier into the dry mixture until a dough forms. 
  5. With a spatula carefully fold in the blueberries and strawberries.
  6. let me tell ya this dough is SO STICKY so coat your surface with a lot of flour.
  7. Roll out the dough so that its about 1/2 in. thick. Use a 3 in. or 2 in. star cookie cutter. Dip it in flour so the dough doesn’t stick.
  8. Once all stars are made, transfer to baking sheet lined with garment paper. Bake for 20-24 min. or until golden brown on the bottom. Let cool.

FOR THE GLAZE:

  1. Mix powder sugar and hot water. 
  2. Once fully combined a pipe-able consistency, cut a small hole in a ziplock bag or pipping bag. Fill and pipe onto cooled scones. Enjoy!
