Healthy Strawberry Chia Pudding

This easy recipe from joyfulhealthyeats.com, is an amazing way to get protein, fiber and omega-3s. It’s also vegan, gluten-free, paleo and keto. Plus its delicious! Perfect strawberry flavor. Its gel-like texture create the ability to help keep you full. Let’s get baking!
INGREDEINTS:
- 1 cup fresh strawberries (cut off the stems)
- 13.5 oz of full fat coconut milk
- 2 tablespoons raw honey
- 1 teaspoon vanilla bean paste
- 1/4 cup chia seeds
DIRECTIONS:
- To a blender or food processor add fresh strawberries, coconut milk, honey and vanilla bean paste. Blend until strawberries are completely blended.
- Pour mixture to a medium bowl.Add the chia seeds. Mix everything together. Cover and let rest for 4 hours or overnight. Enjoy!
