Best Ever Swiss Meringue Buttercream

Okay so this buttercream is the best thing ever! It may take longer to make than regular buttercream but it is so worth it. The texture is creamy, light, and fluffy and has the perfect amount of that chocolate flavor. This amazing recipe is from bakingamoment.com. let’s get baking!

INGREDIENTS:

  • 3 egg whites
  • 1 cup granulated sugar
  • 1 cup unsalted butter (2 sticks), softened but cool
  • 4 ounces semisweet chocolate (melted & cooled slightly)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

DIRECTIONS:

  1. Place the egg whites and sugar in a large bow and set the bowl over a pot of simmering water, and whisk, continuously, until the sugar has completely dissolved. To check this you can rub a little bit of the mixture between your fingers. If you can feel the grains on sugar than keep mixing but if you can feel it than you are good to go.
  2. Remove the bowl from the heat and transfer to a stand mixer or use a hand mixer. Whip on high speed until completely cooled. You can put you hands underneath the bowl every so often and if it is completely cooled then whip in the butter about a tablespoon at a time. Keep whipping until thick and fluffy. (If it begins to look curdled, continue to whip until it comes back together, before adding in remaining butter.)
  3. Fold in the melted chocolate, vanilla, and salt. You did it. Enjoy!
