Easter Carrot Cake Baked Donuts

These donut are so delicious and moist. They have perfect spice and a sweet glaze. These are perfect for easter morning! Recipe from livewellbakeoften.com. Let’s get baking!

INGREDIENTS:

  • 1 cup All Purpose White Flour

INGREDIENTS FOR GLAZE:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 small pinch salt
  • 1 or 2 tablespoons milk
  • Optional: food coloring

DIRECTIONS:

  1. Preheat oven to 350°F. Grease a donut pan and set aside.
  2. In a large mixing bowl, mix the flour, baking powder, cinnamon, ginger, nutmeg, and salt. Set aside.
  3. In a separate mixing bowl, mix together the buttermilk, oil, brown sugar, egg, and vanilla until fully combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Add the grated carrots and gently mix them into the batter.
  6. Spoon the batter into each cavity of the donut pan, making sure to only fill them 3/4 of the way full. You should get about 8 donuts with a large donut pan, I’m using a mini which makes 12 mini donuts.
  7. Bake for about 10 minutes at 350°F or until a toothpick inserted comes out clean. Let cool in the pan for about 5 minutes before transferring to a wire rack.

DIRECTIONS FOR GLAZE:

  1. Whisk together the powdered sugar, vanilla extract and salt.
  2. Add 1 tablespoon of milk, and whisk to combine. If the glaze is too thick, add additional milk, 1/2 teaspoon at a time until the desired consistency.
  3. Add food coloring if you want.  I colored it blue to look like a robin egg. I used luster dust to make the speckles. Dip the cooled donuts into the glaze. Enjoy!
