Donut Sugar Cookies

These were so fun to make and really cute. I love donuts and I love sugar cookies and this was the perfect recipe. Let’s get baking!
INGREDIENTS:
- 1 cup butter (room temp.)
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 3 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
ICING:
- 3 cups powdered sugar
- 2 teaspoon lemon juice
- 2 large egg whites
- food coloring (pink or red)
DIRECTIONS:
- Using a stand mixture or hand mixture, beat the butter and sugar until fluffy.
- Add in the egg and the vanilla until smooth.
- Add in the flour, salt, baking powder. Mix everything until combined but don’t overmix it.
- lightly knead the dough. make a ball and wrap it plastic wrap. Chill 1-2 hours or overnight.
- Dust Your surface with flour. Roll it out 1/4 in. thick. Get a circle cookie cutter and cut out a circle then take a smaller cookie cutter and cut out the middle just like a donut.
- Pop the cookie dough circles on a baking sheet lined with parchment paper and put it in the fridge for 10 more minutes.
- bake them at 350 degrees for 9-10 min. and the bottom gets golden brown.
- Cool and then make the frosting. Beat egg whites with lemon juice. Add in powdered sugar. Add in food coloring if desired. (1 batch of icing should be enough for 6-7 cookies.)
- Fill a piping bag and decorate like a donut. Add sprinkles. Enjoy!
