“Cake” for Dinner

My friend, Callyn made this awesome  April fool’s cake, made with meatloaf and mashed potato “frosting”. She even shared the recipe with me! So if you are able to trick your family with cake for dinner, let me know! 

Loaf:

  • 1 1/2 pounds ground beef
  • 1 egg
  • 1 onion soup mix
  • 1 cup milk
  • 1 cup dried bread crumbs (I use the Italian seasoned)
  • salt and pepper to taste

Topping:

  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 1/3 cup ketchup

DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the beef, egg, onion, milk and bread. Season with salt and pepper to taste.
  3. Lightly grease two round cake pans and place 1/2 the loaf into each, spreading it out to the edges.
  4. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  5. Bake at 350 degrees F for 1 hour.
  6. While meatloaf is baking boil peeled and quartered potatoes (6-8, I used 8 because we love potatoes) for mashing.
  7. Once soft, mash with 1/2 c butter. Add milk once the butter has melted until you have a nice creamy texture.
  8. Layer one loaf round on a plate, spread about a cup worth of potatoes on its top.
  9. Add the second layer of meatloaf on the potatoes.
  10. Spread the rest of the mashed potatoes over the top and outsides of the “cake”. Spread smooth.
