Easy Halloween Cupcakes

These cupcakes were the right amount of cute and spooky. The perfect recipe for halloween. These cupcakes would also be be great for a halloween party. This is my absolute favorite vanilla cupcake recipe from Natasha’skitchen.com. Let’s get baking!

INGREDIENTS FOR CUPCAKES:

  • 1 1/4 cups All- Purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1/2 cup buttermilk (room temperature)

    FOR DECORATION:

  • 3 piping bags
  • black food coloring
  • green food coloring
  • orange food coloring
  • tip number 47
  • tip number 1M
  • tip number 2A
  • tip number 70
  • candy coated edible eye balls (big and small)
  • candy coated mustache (optional)
  • Wilton red sparkle gel 

    DIRECTIONS FOR CUPCAKES:

    1. Preheat the oven to 350°F and line a cupcake/muffin pan with cupcake liners.
    2. In a medium bowl, whisk together flour, baking powder, and salt. Set flour mixture aside.
    3. In a bowl of an electric mixer, beat butter and sugar until thick and fluffy. Scrape down the bowl as needed.
    4. Add in eggs one at a time, beating well. Beat the vanilla. 
    5. Add the flour mixture in thirds alternating with the buttermilk. Again scraping down the bowl as needed. Beat well until just combined. Careful not to over-mix.
    6. Divide the batter evenly in a muffin or cupcake pan, Bake for 20-23 minutes or until a toothpick inserted comes out clean. Let cool for at least an hour.
    7. Make my homemade vanilla buttercream recipe. Fill a piping bag fitted with tip number 47, with white frosting, then fill a piping bag fitted with a number 1M tip with orange frosting.  Fill a piping bag fitted with a number 2A with green frosting, and lastly a piping bag with green frosting fitted with a number 70 tip.
    8.  For the green monster take the piping bag with green frosting. pipe along the outside of the cupcake making you way toward the middle.Quickly add on the pairs of candy coated eye balls. 
    9. For the pumpkin cupcake use the piping bag with the orange frosting. Pipe on the outside, working your way to the middle. On top add a leaf with tip number 70. Add on the big candy eyes and if you want a mustache add that on too 🙂 
    10. And lastly, for the mummy, at the top of the cupcake, spread black frosting on the section where the eyes will go. With the flat side of the tip, pipe the white frosting in straight lines all over the cupcake. Add on the candy eyes and with the red piping gel, pipe little “drips of blood” for spookier effect and to fill in any gaps you missed with the frosting. That’s it. Enjoy!
