Coffee Chocolate Chip Muffins

These coffee chocolate cups muffins turned out so good!! They are moist and flavorful, but not too overpowering, although it isn’t super sweet the chocolate chips balance everything out. Even if you are not a huge coffee fan I still recommend you try these! You might be surprised. This recipe is altered from bettycrocker.com. Let’s get baking!

INGREDIENTS:

  • cups all-purpose flour
  • tablespoons unsweetened cocoa powder
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup packed brown sugar
  • cup milk (take away 1/3 cup from the 1 cup milk)
  • 1/3 cup vegetable oil
  • 1/2 cup coffee 
  • 1egg
  • cup semisweet chocolate chunks or chips
DIRECTIONS:
 
  1. Heat oven to 400 degrees F. line muffin tins with paper baking cups.
     
  2. In medium bowl, mix flour, cocoa, baking powder and salt; set aside.
  3. In large bowl, whisk together brown sugar, milk, oil, coffee and egg . Stir in flour mixture just until flour is moistened.
  4. Fold in chocolate chunks. Divide batter evenly among muffin cups.
     
  5. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan onto a cooling rack. Enjoy!
