Easy Buttermilk Drop Biscuits

These biscuits are super easy to whip up. They are soft and flaky. Once you use this recipe from  Cook’s illustrated baking book, you will never use any other recipe but this one. Let’s get baking!

INGREDIENTS:

  • 2 cups all purpose flour
  • 2 teaspoons baking powder 
  • 1/2 teaspoon baking soda
  • 1 teaspoon sugar 
  • 3/4 teaspoon salt
  • 1 cup buttermilk (chilled)
  • 8 tablespoons unsalted butter (melted and cooled slightly)
  • plus 2 tablespoons melted butter to brush on biscuits after baking 

DIRECTIONS:

  1. Preheat the oven to 475 degrees F. Prepare a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar and salt until combined. 
  3. Next, in a bowl, combine the buttermilk with the 8 tablespoons melted butter, stirring till the butter starts to form clumps. 
  4. Pour the buttermilk mixture into the flour mixture. Stir together with a rubber spatula until the dough is combined and pulls away from the sides of the bowl. 
  5. Use a greased 1/4 measuring cup to scoop the batter onto the baking tray, making sure they are spaced out. Bake for 12-14 minutes or until golden brown. Brush with remaining 2 tablespoons of butter and transfer to cooling rack. Enjoy!
