Grinch Cupcakes

These classic and iconic Grinch cupcakes are so perfect. I love watching the Grinch around the holidays, so these cupcakes were a no brainer. They have the perfect amount of chocolate flavor and are so moist. Let’s get baking!
INGREDIENTS:
- 3/4 cup all-purpose flour
- a pinch of salt
- 1 teaspoon baking soda
- 1/8 baking powder
- 1/3 cup cocoa powder
- 3/4 cup granulated sugar
- 2 1/2 tablespoons (softened)
- 1 egg
- 1/2 cup milk
- 1/4 teaspoons vanilla extract
DIRECTIONS:
- First, preheat the oven to 350 degrees F. line a muffin tin with cupcake liners.
- In a large bowl, cream together the butter and sugar until fluffy.
- Add in the eggs one at a time. Scrape down sides as needed. Then, mix in the vanilla extract. Set aside.
- Sift together the flour, baking powder, baking soda, cocoa, and salt.
- Now alternately add in the flour mixture and milk. The batter will be thick at first and then as you add in the milk it will thin out.
- Spoon the batter in the cupcake tin. Fill them 3/4 full.
- Bake for 15-17 minutes or until toothpick is inserted and comes out clean. Cool completely.
- Make my vanilla buttercream recipe. You can even add some peppermint extract to give it a little holiday flavor! Dye the frosting green and fill piping bag fitted with a 2D or 1M tip.
- Start on the outside and frost up and toward the middle. You can gently shake your hand if you want to create that ruffle kind of effect (thats what I did). Stick on a heart shaped sprinkle and enjoy!
