These are probably the best muffins ever! Don’t believe me? try for yourself. Don’t let your diet stop you from having  delicious treats. These keto muffins have little carbs and sugar yet are still moist, flavorful, and tart from the fresh blueberries. This great recipe is from fourscore living.com. Let’s get baking!

INGREDIENTS:

  • 2 cups blanched almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup oil (I use avocado oil)
  • 3 large eggs
  • 1 teaspoon fresh lemon zest
  • 1/4 cup any sweetener (I prefer monk fruit sweetener)
  • 1/2 cup blueberries (fresh or frozen)

DIRECTIONS:

  1. Preheat oven to 350 degrees F and line a cupcake pan with 12 paper liners. Set aside.
  2. In a large bowl, whisk together the almond flour, salt, and baking soda.
  3. Add in the oil, sweetener of choice, eggs, and lemon zest and mix until well combined.
  4. Stir in the blueberries. Spoon batter evenly into your paper liners. Stick blueberries on top.
  5. Bake for 20 – 22 minutes or until toothpick inserted in the center comes out clean. let cool for 5-10 minutes before serving.
  6. Store in an airtight container at room temperature.
