No Bake Cheesecake

This recipe is delicious and super fluffy. No-bake cheesecake is the best and really easy. My favorite part is the sweet graham cracker crust. Let’s get baking.

INGREDIENTS FOR CRUST:

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons butter (melted)

INGREDIENTS FOR FILLING:

  • 16 ounces brick-style cream cheese  softened 
  • 1 cup powdered sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups cold heavy whipping cream

DIRECTIONS:

  1. First, for the crust, line the bottom of a springform pan with parchment paper. set aside. If you don’t have a springform pan, the you can use a pie dish. It works either way.
  2. In a medium sized bowl, combine the graham cracker crumbs and sugar. Next add the melted butter and coat all of the crumbs.
  3. Scoop all of the mixture into the pan and firmly press in evenly around the bottom of the pan. Transfer the crust to the refrigerator while preparing the filling.

FOR THE FILLING:

  1. In a bowl of a mixer, beat the cream cheese until creamy. Add in the powdered sugar, lemon juice, and vanilla. 
  2. In a separate bowl, beat the heavy whipping cream just until stiff peaks form.
  3. Fold the whipping cream into the cream cheese mixture.
  4. Take the crust out of the refrigerator and spread the filling evenly in the pan.
  5. Refrigerate for at least 6 hours. Right before serving, you can top it with whipped cream, fresh berries, flavored syrup or whatever your imagination comes up with. Enjoy!
