No Bake Cookies

These are super easy cookies and have a few ingredients. Best part is, you don’t even have to turn on your oven! This amazing and addictive recipe is from livewellbakeoften.com. Let’s get baking!

INGREDIENTS:

  • 1/2 cup butter (cubed)
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 3 cups quick-cooking oats

DIRECTIONS:

  1. Line two large baking sheets with parchment paper and set aside.
  2. Combine the butter, sugar, milk, and unsweetened cocoa powder in a large saucepan and heat over medium heat. Stir often until the butter is melted and everything is well combined.
  3. Bring the mixture to a  boil and allow to boil for 60 seconds (make sure to set a timer!) stirring occasionally.
  4. Remove mixture from heat and stir in the peanut butter and vanilla extract.
  5. Finally, add in the oats and mix until all of the oats are coated with the mixture and everything is well combined.
  6. Drop spoonfuls of the mixture onto the prepared baking sheets (you can use a spoon or cookie scoop). Cool for 20 to 30 minutes. Enjoy!

TIPS:

  • To make the cookies a bit more round, you can take a round cookie cutter or glass that is slightly wider that the cookie and swirl it around for about 15 seconds to reshape the cookie.
  • Keep cookies in an airtight container at room temperature for up to a week.
  • Makes about 30 cookies
