Vanilla Baked Donuts With Cranberry Glaze

These cute and easy donuts are great for the holidays, especially around thanksgiving.  Glaze recipe is from sweetsimplemasala.com. Let’s get baking!

DIRECTIONS:

  • 1 cup all purpose flour 
  • 1/4 tsp nutmeg
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 5 tbsp milk
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 3 tbsp vegetable oil

INGREDIENTS FOR GLAZE:

  • cup fresh cranberries
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • ¼ cup sugar
  • ½ cup powdered sugar

DIRECTIONS:

  1. Preheat the oven to 350 degrees F. Grease a  donut pan and set aside.
  2. In a small bowl, mix flour, nutmeg, sugar, baking powder and salt, mix until combined. Set aside.
  3. In another bowl, with a whisk, combine the milk, egg, vanilla extract and vegetable oil. Add in the flour mixture a little at a time, mixing  just until combined.
  4. Transfer the batter to a piping bag and pipe the batter into the donut wells. 
  5. Bake for 10-11 minutes or until a toothpick inserted in the center of a donut comes out clean.
  6. Cool completely on a cooling rack. 

TO MAKE THE GLAZE:

  1. In a small saucepan, add cranberries, sugar, orange juice and orange zest . cook until cranberries pop and a thick sauce forms. Remove from heat and allow to cool.
  2. In a small bowl, whisk together the confectioners’ sugar and slowly add the cooled cranberry sauce until the thick glaze consistency is reached. If additional liquid is required, add 1 teaspoon of orange juice at a time. Dip the cooled donuts in glaze and return to the wire rack. Let stand until the glaze is set.Enjoy!
