These cookies are colorful and fun, plus they taste amazing. I had a-lot of fun making these cookies and they turned out looking really cool. I hope you give this recipe a try. Also don’t forget to watch the video down below for more clarification on the process. Let’s get baking!

- 2 tablespoons confectioner’s sugar
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup unsalted butter (cubed and at room temperature)
- 2 cups all- purpose flour
- rainbow food coloring
DIRECTIONS:
- Combine the granulated sugar, salt, and confectioner’s sugar in a bowl.
- In another bowl, add the egg and vanilla. Give that a mix.
- Beat the butter until smooth. Add the sugar mixture and mix until combined. Add the egg mixture now. Once everything is combined add in the flour and it it should start to turn into dough.
- Take the dough and divide it in half. Set the one ball aside. Then take the other have and make 6 little balls. Dye them each a color of the rainbow.
- Cover your work surface in flour. Sandwich the big ball of beige dough between two pieces of floured parchment paper and roll in out so it’s a rectangle.
- Take the 6 balls of colored dough and roll it between your hands until you get a snake like shape. Line all of the colored and shaped dough side by side on a piece of floured parchment paper.
- Again, sandwich the colored dough between the two pieces of parchment paper.Roll it out so you get a rectangle shape. Plop the rolled out beige dough on top of the colored dough. Trim the edges.
- Roll the dough up into a log. Freeze for at least an hour.
- Take the dough log out of the freezer and cut it into 1/4 in. thick slices. Place the slices on a baking sheet lined with parchment paper. Bake the cookies at 325 degrees F for 14 minutes or until edges are slightly golden brown.
- Cool completely and enjoy!
