Chocolate Anniversary Surprise Cupcakes

These cupcakes were for my grandparent’s 45th anniversary. If you’re wondering what the surprise is… a sprinkle filled middle. Yummy! This great recipe is from Allrecipes.com. let’s get baking!

INGREDIENTS:

  • 1 1/2 cup all-purpose flour
  • a pinch of salt
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 3/4 cup unsweetened cocoa powder
  • 3 tablespoons butter (softened)
  • 1 1/2 cup granulated sugar
  • 2 eggs
  • 3/4 teaspoons vanilla
  • 1 cup milk

DIRECTIONS:

  1. First, preheat the oven to 350 degrees F. line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until fluffy.
  3. Add in the eggs 1 at a time. Then mix in the vanilla extract.
  4. Sift together the flour, baking powder, baking soda, cocoa, and salt. Set aside.
  5. Now alternately add in the flour mixture and milk. The batter will be thick at first and then as you add in the milk it will thin out.
  6.  Spoon the batter in the cupcake tin. Fill them 3/4 full.
  7. Bake for 15-17 minutes or until toothpick is inserted and comes out clean.
  8. Use your thumb or  a piping tip to make a hole. Fill the hole with sprinkles of choice, for a fun surprise.
  9. Make my go-to buttercream frosting. Fill a piping bag and cut it off, leaving a pretty big hole. Start on the outside and pipe to the middle.  
  10. Melt chocolate chips. Fill a piping bag and snip the  end off. You want a pretty small hole for more control. 
  11. On a baking sheet lined with parchment paper, make however many years the anniversary is. They should dry in about 20 minutes. Each brad is different so it might not be the same drying time as me.
  12. Once they are fully dry, peel them off the parchment paper very carefully. I would recommend making as many cupcakes as you have with a few extra in case they break.
  13. Carefully stick the chocolate cupcake toppers in the cupcakes. Enjoy!
