Cookie Dough Sprinkle Cake

Me and my friend made this cake it turned out so cute If you are a fan of cookie dough then you have to try this cake. Let’s get baking!

INGREDIENTS FOR CAKE:

  • 1 stick (8 tablespoons) unsalted butter (room temperature)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon fine salt
  • 2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 5 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 cup milk

INGREDIENTS FOR THE COOKIE DOUGH FILLING:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • 8 tablespoons butter (very softened )
  • 6 tablespoons brown sugar
  • 6 tablespoons white sugar
  • 1 teaspoons vanilla
  • 2 tablespoon milk
  • 1/2 cup chocolate chips

DIRECTIONS FOR THE CAKE:

  1.  Preheat the oven to 350 degrees F. Grease the bottoms and sides of two 8-inch round cake pans with my homemade cake pan release.
  2. Whisk together the flour, baking powder and salt in a medium bowl. Set aside.
  3. Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light and fluffy. Beat in the eggs, one at a time, and then the vanilla until combined.
  4. Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Divide the batter evenly between the prepared pans.
  5. Bake the cake for about 35-40 min. or until toothpick comes out clean. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.

DIRECTIONS FOR THE COOKIE DOUGH:

  1.  First, in a heat safe bowl, put the flour in the microwave for 1 minute and 15 seconds to get all the harmful bacteria out that can make you sick. Stir it up. Add the baking soda and salt to the flour and give that a whisk. Set aside.
  2. In another bowl, with a spatula mix the butter, white sugar, brown sugar, vanilla, and milk. The texture should be super smooth. 
  3. Now sift the flour mixture into the butter and sugar mixture. Mix until smooth and without lumps. If you don’t sift the flour, you will have lots of lumps. I found that when the flour is heated in the microwave it lumps together, so make sure to sift it thoroughly.
  4. Once it’s smooth, add in the chocolate chips. But make sure not to overmix. Your cookie dough is finished

FOR THE ASSEMBLY:

  1. Level off your cooled cakes. Place on a turn table and spread the cookie dough in the layer evenly. Save enough cookie dough to make balls to top. Place the second cake layer on top. 
  2. Make my vanilla buttercream recipe. Dye the frosting a fun color like pink if you desire. Frost the outside evenly. Save some of the buttercream to pipe details later.
  3. Work fast so the buttercream doesn’t harden. Stick on sprinkles around the Botton edge of the cake. 
  4. Fill the rest of the pink frosting in a piping bag fitted with a number 2D tip.  Pipe rosettes around the top of the cake. Place cake in the fridge.
  5. Add sprinkles to the remaining cookie dough. With a cookie scoop, scoop cookie dough onto a baking tray and place in the freezer for at least 15 min. Place the  cookie dough balls onto of the rosettes and enjoy!
