Happy easter! I love how these turned out! These cookies are so amazing. The cookies hold their shape and have the perfect color. If you love coconut than these are the cookies for you! These cookies are so easy to whip up and great for sharing with family and friends for easter. Recipe is from preppykitchen.com. Let’s get baking!

FOR THE COCONUT FLAKE NESTS:

  • 5 oz coconut flakes sweetened

INGREDIENTS FOR COOKIES:

  • 4 cups all purpose flour
  • ¾ teaspoon salt
  • ½ cup cornstarch 
  •  butter (room temp)
  • 1 cup sugar 
  • 2 eggs
  • 1 teaspoon vanilla extract

FOR THE BUTTERCREAM:

  • 1 cup butter  unsalted, (room temp)
  • 2 cups powdered sugar 
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream

FOR THE CHOCOLATE SPECKLE:

  • 1 tablespoon cocoa powder 
  • 1 tablespoon vanilla extract
  • 1 bag jelly bean eggs

FOR THE COCONUT FLAKES:

  1. Preheat oven to 325F.
  2. Spread out coconut on a baking sheet.
  3. Bake for about 5 -10 min.

FOR THE COOKIES:

  1. Sift flour, salt, and cornstarch into a medium bowl. Give it a whisk.
  2. In a stand mixer fitted with a paddle attachment or a hand mixer, cream the butter and sugar together until fluffy.
  3. Add in the eggs. Mix until combined.
  4. Add dry ingredients to the wet. Add in the vanilla.
  5. Roll into a disk. Chill for about 1 hour.
  6. Preheat the oven to 375 degrees. Press to flatten and roll between 2 pieces of parchment paper.
  7. Roll dough to ½ inch.
  8. Use a circle cookie cutter and cut the dough. Place cookies onto a baking sheet with parchment paper.
  9. Bake for 12 min. Let cool completely. 
FOR ASSEMBLY:
 
  1. Fill a piping bag with the buttercream and pipe a small circle.
  2. Cover completely in the toasted coconut flakes.
  3. Place the jelly beans in the middle. Enjoy!
