The Best Funfetti Cookies

These soft and fun looking cookies reminds me of confetti and today is New Year’s Eve so these cookies are perfect. You have to try these cookies. They are great for any occasion. Recipe is from Pretty. Simple. Sweet.com. Let’s get baking!

INGREDIENTS:

  • 2 and ⅛ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon fine salt
  • 1 cup (unsalted butter, softened) 
  • cup granulated sugar
  • ¾ cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sprinkles 
DIRECTIONS:
  1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper. Set aside.
  2. In a medium bowl, sift together flour, baking soda, and salt. Set aside.
  3. In a bowl with a hand held mixer, beat butter, granulated sugar, and powdered sugar until fluffy and well combined.
  4. Beat in the egg and vanilla extract just until combined.
  5. Add flour mixture and beat just until combined. Fold in sprinkles. Be careful not to over-mix.
  6. Shape dough into balls, the size of 1.5 tablespoons each (I use a cookie scoop), and place on the cookie sheets. Spacing them 2-inches apart.
  7. Bake for 11-12 minutes until cookies are slightly brown on the bottom. Cool completely.
  8. Store cookies at room temperature in an airtight container for up to 3 days. Cookies can also be frozen for up to 2 months.
