No Bake Cookies

These are super easy cookies and have a few ingredients. Best part is, you don’t even have to turn on your oven! This amazing and addictive recipe is from livewellbakeoften.com. Let’s get baking!
INGREDIENTS:
- 1/2 cup butter (cubed)
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 teaspoon pure vanilla extract
- 3 cups quick-cooking oats
DIRECTIONS:
- Line two large baking sheets with parchment paper and set aside.
- Combine the butter, sugar, milk, and unsweetened cocoa powder in a large saucepan and heat over medium heat. Stir often until the butter is melted and everything is well combined.
- Bring the mixture to a boil and allow to boil for 60 seconds (make sure to set a timer!) stirring occasionally.
- Remove mixture from heat and stir in the peanut butter and vanilla extract.
- Finally, add in the oats and mix until all of the oats are coated with the mixture and everything is well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheets (you can use a spoon or cookie scoop). Cool for 20 to 30 minutes. Enjoy!
TIPS:
- To make the cookies a bit more round, you can take a round cookie cutter or glass that is slightly wider that the cookie and swirl it around for about 15 seconds to reshape the cookie.
- Keep cookies in an airtight container at room temperature for up to a week.
- Makes about 30 cookies
