Pink Velvet Cake

This cake was a really fun take on a red velvet cake. I’m really happy with how the cake looked and tasted. I even have tons of tricks and tips to help you bake and decorate this cake. This recipe is from iambaker.com. Let’s get baking!

INGREDIENTS:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • pinch of salt
  • 2/3 cup whole milk
  • 6 tablespoons butter (softened and cubed)
  • 1/2 teaspoon almond extract
  • 2 teaspoons of vanilla extract
  • 4 egg whites
  • pink or red food coloring

DIRECTIONS:

  1. Preheat the oven to 350 degrees F. Prepare your pans ( I found an amazing recipe for for homemade non-stick cake release and I really works. I highly recommend it!)
  2. In a large mixing bowl of a stand mixer or large bowl with a had mixer, combined the flour,  sugar, baking powder, and salt. 
  3. add in your butter. This is called reverse creaming. Usually you beat the butter and wet ingredients then add in the flour mixture but in this case bet the butter into the flour mixture.
  4. Add in the milk, vanilla and, almond extract as well. 
  5. Now add in the 4 egg whites and mix on low speed until fully incorperated.
  6. Put little bit of food coloring (red or pink either one will work fine)  until you are happy with the color. transfer to your pan (I found a great hack for cake strips that make your cake flat cakes that bake evenly. No leveling off the cakes anymore!)
  7. Once the cakes have cooled, make my go-to buttercream recipe.  Pipe a large ring around the outside and then make a zig zag motion. Smooth it out with an offset spatula. This helps you get the perfect layer. Do the same for however many layers you do.
  8. Now just keep frosting an even layer around your cake, smoothing it as you go. A cake turn table really comes in handy for this step.
  9. Using a tip number 2D pipe little dollops around the top edges of the cake.
  10. And now for the final touch…. Lots and Lots of sprinkles! Use your hand to gently press the sprinkles to the bottom of the cake. Now you have a beautiful pink velvet cake to enjoy!
