Cookies And Cream Cake

This recipe from sugarspunrun.com has become a new favorite! There are many methods in this recipe that make for a super fully and moist cake! It was fun to spice it up a bit and add delouse Oreos! Let’s get baking! 

INGREDINTS:

  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar 
  •  Tablespoon baking powder
  • 1 teaspoon salt
  • 6 Tablespoons unsalted butter room temperature 
  • 2/3 cup canola oil or vegetable oil
  • 1/2 cup sour cream
  • 1 Tablespoon vanilla extract
  • 3/4 cup whole milk room temperature preferred 
  • 6 large or extra large egg whites, room temperature preferred 
  • 20 Oreo cookies broken into pieces

DIRECTIONS:

  • Preheat your oven to 350 degrees F and prepare two or three 8-inch round cake pans with parchment paper and grease.
  • In the bowl of a stand mixer or hand mixer whisk together flour, sugar, baking powder, and salt.
  • Add butter one tablespoon at a time. The mixture should resemble coarse sandy crumbs.
  • Add the oil and stir until combined, then add sour cream and vanilla extract on low-speed until completely combined. With mixer still on low-speed, add milk until combined.
  • In a separate bowl beat egg whites to stiff peaks and use a spatula to gently fold your whipped egg whites into batter careful not to over-mix.
  • Carefully fold in broken Oreo pieces. Pour batter into prepared baking pans and bake for 30-35 minutes. Allow to cool, decorate, and enjoy!
